Reheating Food 75c +

When reheating food that has already been cooked, it is crucial to adhere to the same standard of safety. Reheating temperatures should surpass 75 degrees Celsius to guarantee that the food remains safe for consumption.

Hot Holding

In the realm of hot holding practices, several key measures are outlined in the SFBB pack.

Firstly, it is essential to keep the food at a steaming and piping hot temperature, especially if using a probe to confirm that it is well above 75 degrees Celsius.

Secondly, the hot holding equipment and food itself already be heated and above 75 degrees Celsius.

Lastly, if the food’s temperature drops below 63 degrees Celsius, it must either be utilized within two hours or disposed of to prevent bacterial growth and maintain food safety.
