What Is Two Stage Cleaning?

Two stage cleaning means clean first and sanitise second. Both steps are needed because sanitiser cannot work well on a dirty surface.

Stage 1 – Clean

Remove food, dirt, grease and waste.

Use hot soapy water or a food-safe cleaner.

Stage 2 – Sanitise

Apply food-safe sanitiser.

Leave it for the correct contact time.

The Correct Cleaning Method

Clear the Area

Remove food, tools, rubbish and food waste. The table must be empty before cleaning starts.

Wash the Surface

Use hot soapy water. Remove dirt, grease, food and allergen residue.

Apply Sanitiser

Cover the whole surface. Then wait for the correct contact time.

Read the Label

Check the contact time. Some sanitisers need rinsing, so never guess.
